With so many new restaurants opening here in the metro, one new resto sets itself apart from others. A must-try and must-visit is Madison's Bistro Moderne.
The minimalist interiors of the main dining area - simple yet elegant, classy yet comfortable.
The bar has a wide selection of the finest wines from all over the world.
I love how the pictures were mounted on the corridor walls going to the restroom.
Who can go wrong with dishes especially prepared by international chefs who completely understand the discriminating palates of Filipinos? Heading the team is Executive Chef Giovanni Sias who has over 25 years of experience in the kitchen and has a flair for combining international menu with innovative cuisine.
Chef de Cuisine, Hylton Le Roux, who began his culinary career in the UK by winning a junior chef competition and trained under well-renowned Michelin-star chefs Gordon Ramsey and Heston Blumenthal, is also on the team.
Of course, the food is exceptional! This Mixed Green Salad (P295) with caramelized pear, beet root, tomatoes, Gorgonzola Cheese and walnuts in white Balsamic dressing, has everything I wanted in a salad - sweetness, flavor and texture.
Speck and Goat Cheese Mousse (P550) with Truffle scent and Apple Mustard Chutney is a standout! It melted in my mouth and began to dance in my tongue...so good, you must try this! (FYI, Speck is a North Italian Smoked Prosciutto, commonly made in Trentino Region.)
For the weight watchers, they have Homemade Spaghetti Chitarra with Vongole and extra virgin olive oil (P480) in suitable al-dente-ness.
The Braised Lamb Shank (P750) was cooked to perfection. I could never ask for more!

You gotta have room for dessert because desserts are heavenly! Warm Peanut Butter and Chocolate Fondant with Salted Caramel and Chantilly (P250), with just the right sweetness, is one of our favorites.

There's also an exclusive room which can accommodate 8-12 diners who want to enjoy the luxuries of a customized degustation menu specially prepared for you and your group.
Next door is Madison's Deli offering wines, freshly baked breads, sandwiches, cold cuts, cheeses, pasta, sauces, and other deli items for take out - a must-visit!
